We’re 2 weeks away from the start of the school year, and my Farewell to Summer Tour* is starting to feel very real. One of the realest signs that the season is coming to an end is the abundance of figs that have exploded from our backyard tree. They take up an entire shelf in my fridge, and if I see you in the next two weeks, I’ll probably hand you a pint of them. Other than eating them by the fistful, one of my favorite ways to enjoy figs is in this simple compound butter.
If you heard ‘fig butter‘ and thought of something akin to apple butter, I’m going to need to you to realign your thoughts to actual butter. Here, softened butter gets a burst of jammy sweetness from figs that have been roasted with honey. The sprinkle of flaky salt gives the whole thing some contrast and extra crunch. Spread liberally on a fat slice of Janey’s Bread, it’s about as good as it gets.
Salted Honey Fig Butter
Ingredients
1 pint figs
~ 1 tablespoon honey
8 oz salted butter, room temperature
2 teaspoons flaky salt
Directions
Preheat the oven to 400℉, and prepare a sheet pan with a silpat or parchment paper. Remove the stems and quarter 1 pint of figs. Spread figs on the sheet pan, and drizzle with about a tablespoon of honey. Roast for 10-15 minutes. The figs should release their liquid, and that liquid should cook off so that the figs are still squishy but not swimming in their own juice. Allow to cool for 5-10 minutes on the sheet pan.
In a mixing bowl, combine 8 oz butter, cooked figs, and about half of the flaky salt. Use a rubber spatula to combine thoroughly, and then scoop into the containers of your choice, or spread on a piece of parchment and roll into a log (for easy slicing!). Sprinkle with remaining salt and use immediately, or store in the fridge for up to 1 month.
